The grapes are harvested in late autumn, by which time the grapes have shrivelled to raisins and are already partially dried on the vine.
The Appassimento process means the grapes are left to dry in baskets until December after the manual harvest and selection. Air circulation keeps the grapes from growing mould. At the end of December, the maceration takes place very slowly at low temperatures and the wine is kept on lees until March.
No oak ageing
